Warren Foegele scored two goals, Evan Bouchard had a goal and two assists, Evander Kane had a goal and an assist and Jack Campbell made 24 saves for the Oilers, who played without star center Connor McDavid because of an upper-body injury.
After falling behind three times, the Wild took their first lead, 4-3, at 6:48 of the third period. Hartman passed the puck from behind the net to Kaprizov, who made a quick feed to Zuccarello in the slot for the one-timer.
Minnesota extended the lead to 5-3 at 10:28 when Eriksson Ek came out from behind the net to receive a pass from Pat Maroon before spinning and scoring from in close.
Kane scored nine seconds into a power play to trim the deficit to 5-4 at 12:55, but Hartman scored his third goal of the game, off a pass from Middleton while driving to the net, to extend the lead to 6-4 with 4:10 left.
It was Hartman's second NHL hat trick and second five-point game.
Marcus Foligno added an empty-net goal with 3:23 left to make it 7-4.
The Oilers took a 1-0 lead 54 seconds into the game on a slap shot from above the right circle by Bouchard.
Minnesota tied it 1-1 at 7:47 of the first when Hartman sent the puck to the front of the net from near the wall and Marco Rossi redirected it past Campbell.
The Oilers moved back ahead 2-1 at 18:27 of the first period when the puck caromed to Foegele and he scored on a one-timer.
The Wild tied it 2-2 with 59 seconds left in the opening period when Hartman scored off a rebound.
Foegele scored 32 seconds into the second period on a wrist shot from the high slot, giving Edmonton its third lead of the game, 3-2.
